Day 7 Challenge

A Favorite Recipe

Wow, this is a hard one for me! I have so many favorite recipes. I like to cook and I love getting new yummy recipes. I mostly cook pastas but can't pick a favorite one. So I am picking my favorite crock-pot recipe. My new found love!

Cuban Braised Beef and Peppers
Serves 4

1 28-ounce can diced tomatoes, drained
2 red bell peppers
1 onion- cut into 8 wedges
2 teaspoons of dried oregano
1 teaspoon ground cumin, (optional)
1 teaspoon of Kosher salt and black pepper
1.5lbs. of flank steak, cut crosswise into thirds
Rice
Avocado sliced
Fresh cilantro, cut for garnish

In a slow cooker combine tomatoes, pepper, onion, oregano, cumin, salt, pepper. Nestle steak among vegetables. Cook until meat is tender and pulls apart easily. On high for 4-5 hours or low for 7-8 hrs.

25 minutes before serving cook rice.
Using two forks shred meat in pot and mix into cooking liquid. Serve with rice and top with sliced avocado and cilantro.

I'm totally going to try this! I really need to use my crockpot more often! And... I'm horrible at going to the fresh meat and knowing what steak is for what. So, now I know what to use flank steak for. :) I'll let you know when I make this!
